
8 oz (1 cup) dry, rinsed lentils
8 oz (1 cup) carrots, peeled and diced
1 small onion, finely chopped
34 fl oz (4 1/4 cups) of water
1 tbsp olive oil
Add the lentils, carrots and water.
Bring to the boil.
Reduce the heat, cover and simmer for 1-1 1/2 hours, until the lentils are soft.
If necessary, you can puree the soup once it's cool, adding a little water to thin the mixture.
